Instructions
- Gather all ingredients and brew 1 cup of espresso or strong coffee; allow it to cool.
- In a mixing bowl, blend mascarpone cheese with sugar and vanilla until smooth.
- Whip heavy cream until soft peaks form; gently fold it into the mascarpone mixture.
- Briefly dip ladyfingers in the cooled coffee and layer them in a dish.
- Spread half of the mascarpone mixture over the ladyfingers, followed by half of the raspberries.
- Repeat with another layer of dipped ladyfingers, remaining mascarpone, top with raspberries, and dust with cocoa powder.
- Cover and refrigerate for at least 4 hours or overnight before serving.
