Ingredients

  • 2 lbs beef chuck roast, cut into bite-sized pieces
  • 1.5 lbs baby potatoes, whole
  • 4 cloves garlic, minced
  • 4 tbsp unsalted butter
  • 2 cups low-sodium beef broth
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Chop the beef chuck roast into bite-sized pieces.
  2. Rinse baby potatoes and leave whole for cooking.
  3. In a skillet, melt butter and sauté minced garlic until fragrant (about 30 seconds).
  4. Transfer garlic to a slow cooker; add beef chunks, baby potatoes, Italian seasoning, salt, pepper, and beef broth.
  5. Stir gently to combine all ingredients.
  6. Cover and cook on low for 6-8 hours or high for 3-4 hours until beef is fork-tender.
