  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cup diced cucumbers
  • 1 cup diced bell peppers (any color)
  • 1/4 cup thinly sliced red onion
  • 1/4 cup chopped fresh parsley or cilantro
  • 4 whole wheat or spinach tortillas
  • Juice of 1 lemon
  • 2 tbsp extra virgin olive oil

Instructions

  1. Prep your ingredients by draining and rinsing the chickpeas under cold water. Dice the cucumbers and bell peppers into uniform pieces.
  2. In a large bowl, combine the chickpeas, cucumbers, bell peppers, red onion, and herbs.
