Instructions
- Preheat oven to 425°F (220°C) and line a baking tray with parchment paper.
- Rinse baby potatoes and cut them in half or quarters for even cooking.
- In a saucepan, melt ½ cup unsalted butter over medium heat. Add minced garlic and sauté until fragrant (about 1 minute).
- Combine potatoes with melted garlic butter in a large bowl. Season generously with salt, pepper, and half of the grated Parmesan cheese; toss until well-coated.
- Spread coated potatoes on the prepared baking tray without overcrowding. Sprinkle remaining Parmesan on top.
- Bake for 25-30 minutes until golden brown and crisp.
- Remove from oven and sprinkle chopped parsley over the top before serving.
