Ingredients

  • Baby Potatoes
  • Parmesan Cheese
  • Garlic
  • Unsalted Butter
  • Fresh Parsley
  • Olive Oil
  • Salt and Pepper

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking tray with parchment paper.
  2. Rinse baby potatoes and cut them in half or quarters for even cooking.
  3. In a saucepan, melt ½ cup unsalted butter over medium heat. Add minced garlic and sauté until fragrant (about 1 minute).
  4. Combine potatoes with melted garlic butter in a large bowl. Season generously with salt, pepper, and half of the grated Parmesan cheese; toss until well-coated.
  5. Spread coated potatoes on the prepared baking tray without overcrowding. Sprinkle remaining Parmesan on top.
  6. Bake for 25-30 minutes until golden brown and crisp.
  7. Remove from oven and sprinkle chopped parsley over the top before serving.
