  • 4 large bell peppers (red, yellow, or green)
  • 1 cup halal mozzarella cheese (shredded)
  • 1 lb ground beef or chicken
  • 1 cup cooked rice
  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)
  • 1 cup tomato sauce
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the tops off the bell peppers and remove the seeds.
  3. In a skillet over medium heat, heat olive oil and sauté onions and garlic until golden (about 3–4 minutes).
  4. In a bowl, mix cooked rice, ground meat, tomato sauce, sautéed onions, and half of the shredded cheese. Season with salt and pepper.
  5. Generously stuff each pepper with the mixture.
  6. Place the stuffed peppers in a baking dish upright and cover with foil. Bake for 25 minutes.
  7. Remove the foil and bake for an additional 10–15 minutes until cheese is bubbly and golden.
