Ingredients
- 4 large bell peppers (red, yellow, or green)
- 1 cup halal mozzarella cheese (shredded)
- 1 lb ground beef or chicken
- 1 cup cooked rice
- 1 medium onion (chopped)
- 2 cloves garlic (minced)
- 1 cup tomato sauce
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the tops off the bell peppers and remove the seeds.
- In a skillet over medium heat, heat olive oil and sauté onions and garlic until golden (about 3–4 minutes).
- In a bowl, mix cooked rice, ground meat, tomato sauce, sautéed onions, and half of the shredded cheese. Season with salt and pepper.
- Generously stuff each pepper with the mixture.
- Place the stuffed peppers in a baking dish upright and cover with foil. Bake for 25 minutes.
- Remove the foil and bake for an additional 10–15 minutes until cheese is bubbly and golden.
