  • 1 cup fresh strawberries (chopped)
  • 1/2 cup brown sugar (for streusel topping)
  • 1 tsp ground cinnamon
  • 1/2 cup rolled oats

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a muffin tin with liners or spray.
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, salt, and cinnamon.
  3. In another bowl, mix the melted butter, eggs, and milk until smooth.
  4. Gradually fold the wet mixture into the dry ingredients until just combined.
  5. Gently fold in the chopped strawberries.
  6. For the streusel topping, combine brown sugar, oats, flour, butter, and cinnamon in a small bowl until crumbly.
  7. Fill each muffin cup about two-thirds full with batter and top with streusel.
  8. Bake for 18–20 minutes or until golden brown.
