Ingredients

  • 1 tbsp unsweetened cocoa powder
  • 1 tsp baking soda
  • 1 ½ cups granulated sugar
  • 1 cup vegetable oil
  • 1 cup buttermilk
  • 1 tbsp blue food coloring
  • 2 tsp vanilla extract
  • 4 large eggs
  • Cream cheese frosting for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In another bowl, mix sugar and vegetable oil until well combined. Add buttermilk and eggs, then stir in blue food coloring until desired hue is reached.
  4. Gradually fold dry ingredients into the wet mixture until just combined.
  5. Divide batter between prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
  6. Allow cakes to cool before frosting generously with cream cheese frosting.
