Ingredients

  • Ground beef
  • Flour tortillas
  • Red enchilada sauce
  • Shredded cheese (cheddar and Monterey Jack)
  • Onion
  • Garlic
  • Cumin
  • Sour cream (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, sauté diced onions in oil until translucent. Add minced garlic and cook for an additional minute.
  3. Brown the ground beef in the skillet, breaking it into small pieces. Season with salt, pepper, and cumin.
  4. Mix half of the red enchilada sauce into the beef mixture.
  5. Fill tortillas with the beef mixture and shredded cheese, roll tightly, and place seam-side down in a baking dish.
  6. Pour remaining red sauce over the rolled enchiladas and sprinkle with more cheese.
  7. Bake uncovered for 20 minutes or until bubbly.
