Instructions
- Preheat oven to 375°F (190°C).
- In a skillet, sauté diced onions in oil until translucent. Add minced garlic and cook for an additional minute.
- Brown the ground beef in the skillet, breaking it into small pieces. Season with salt, pepper, and cumin.
- Mix half of the red enchilada sauce into the beef mixture.
- Fill tortillas with the beef mixture and shredded cheese, roll tightly, and place seam-side down in a baking dish.
- Pour remaining red sauce over the rolled enchiladas and sprinkle with more cheese.
- Bake uncovered for 20 minutes or until bubbly.
