  • 1 cup long-grain white rice, rinsed
  • 1 cup queso cheese (blend of cheddar and Monterey Jack)
  • 1 medium onion, chopped
  • 1 cup bell peppers (red or yellow), chopped
  • 2 tbsp olive oil
  • 1/4 cup fresh cilantro, chopped
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients: Dice the steak, chop the onion and bell peppers, and rinse the rice.
  2. Sauté vegetables: In a large skillet over medium heat, add olive oil and sauté onions until translucent. Add bell peppers and cook until softened.
