Description

Crockpot Beef and Broccoli is a delightful dish featuring succulent beef and fresh broccoli enveloped in a savory sauce, perfect for busy weeknights!


Ingredients

  • 1 lb beef flank steak, thinly sliced
  • 2 cups fresh broccoli florets
  • 1/2 cup low-sodium soy sauce
  • 23 garlic cloves, minced
  • 1/4 cup brown sugar
  • 1 tbsp sesame oil
  • 2 tbsp cornstarch (mixed with water)
  • 1-inch piece of ginger root, grated

Instructions

  1. Slice flank steak against the grain into thin strips and chop broccoli into bite-sized florets.
  2. In a bowl, whisk together soy sauce, garlic, brown sugar, sesame oil, ginger, and cornstarch mixed with water until glossy.
  3. Layer the sliced beef in the bottom of the crockpot and pour the sauce over it.
  4. Cover and cook on low for 4 hours or high for 2 hours.
  5. About 30 minutes before serving, add broccoli florets to the crockpot.
  6. Stir gently before serving over rice or noodles.
