Crockpot Beef and Broccoli is a delightful dish featuring succulent beef and fresh broccoli enveloped in a savory sauce, perfect for busy weeknights!

- 1 lb beef flank steak, thinly sliced
- 2 cups fresh broccoli florets
- 1/2 cup low-sodium soy sauce
- 2–3 garlic cloves, minced
- 1/4 cup brown sugar
- 1 tbsp sesame oil
- 2 tbsp cornstarch (mixed with water)
- 1-inch piece of ginger root, grated
Instructions
- Slice flank steak against the grain into thin strips and chop broccoli into bite-sized florets.
- In a bowl, whisk together soy sauce, garlic, brown sugar, sesame oil, ginger, and cornstarch mixed with water until glossy.
- Layer the sliced beef in the bottom of the crockpot and pour the sauce over it.
- Cover and cook on low for 4 hours or high for 2 hours.
- About 30 minutes before serving, add broccoli florets to the crockpot.
- Stir gently before serving over rice or noodles.
