Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 16 oz full-fat cream cheese, softened
  • 1 cup full-fat sour cream
  • ¾ cup powdered sugar, sifted
  • 1 tsp pure vanilla extract
  • 1 cup fresh blackberries

Instructions

  1. Preheat the oven to 350°F (175°C). Combine graham cracker crumbs and melted butter until moistened. Press mixture into a 9-inch springform pan.
  2. Bake the crust for about 10 minutes until golden brown. Let it cool completely.
  3. In a mixing bowl, beat softened cream cheese until smooth. Add sour cream, powdered sugar, and vanilla; mix until well combined.
  4. Gently fold in half of the blackberries into the filling.
  5. Pour the filling over the cooled crust and spread evenly. Top with remaining blackberries.
  6. Chill in the fridge for at least four hours or overnight before serving.
