Description

Ingredients

  • 8 corn tortillas
  • 2 cups red sauce
  • 1 medium onion, chopped
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 tsp cumin
  • 1 tsp chili powder

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, sauté onion until translucent. Add ground beef, cumin, and chili powder; cook until browned.
  3. Warm tortillas in another skillet until pliable.
  4. Spoon meat mixture and cheese onto each tortilla, roll tightly, and place seam-side down in a greased baking dish.
  5. Pour red sauce over enchiladas and top with remaining cheese.
  6. Bake for 20-25 minutes until golden and bubbly.
