Description

Warm up with this easy and delicious lentil soup, filled with vibrant vegetables and hearty lentils. Perfect for cozy nights or a quick nutritious meal.


Ingredients

  • 1 cup green or brown lentils
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups low-sodium vegetable broth
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Chop the onion, carrots, celery, and mince the garlic.
  2. In a large pot over medium heat, sauté onions and garlic in olive oil until fragrant (about 5 minutes).
  3. Add carrots, celery, cumin, paprika, salt, and pepper; sauté for another 3-4 minutes.
  4. Stir in lentils and diced tomatoes; add vegetable broth and bring to a boil.
  5. Reduce heat to simmer and cover for 30-35 minutes until lentils are tender.
  6. Taste and adjust seasoning before serving hot with crusty bread or rice.
