- 1 cup green or brown lentils
- 1 medium onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 1 can (14.5 oz) diced tomatoes
- 4 cups low-sodium vegetable broth
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- Chop the onion, carrots, celery, and mince the garlic.
- In a large pot over medium heat, sauté onions and garlic in olive oil until fragrant (about 5 minutes).
- Add carrots, celery, cumin, paprika, salt, and pepper; sauté for another 3-4 minutes.
- Stir in lentils and diced tomatoes; add vegetable broth and bring to a boil.
- Reduce heat to simmer and cover for 30-35 minutes until lentils are tender.
- Taste and adjust seasoning before serving hot with crusty bread or rice.
