Ingredients

  • Salmon fillets
  • Extra virgin olive oil
  • Fresh lemon juice
  • Fresh dill weed
  • Garlic powder
  • Salt and pepper
  • Zucchini or asparagus (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Lightly grease a baking dish with olive oil and place the salmon fillets skin-side down.
  3. Drizzle olive oil over the fillets, then season with salt, pepper, garlic powder, and dill. Squeeze fresh lemon juice on top.
  4. If desired, toss zucchini or asparagus in olive oil and arrange around the salmon.
  5. Bake for 12-15 minutes until the salmon flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
