Ingredients

  • 2 cans chickpeas, rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • Salt and pepper to taste

Instructions

  1. Rinse and drain the chickpeas.
  2. Dice the cherry tomatoes and cucumber into bite-sized pieces.
  3. Thinly slice the red onion; soak in cold water for 10 minutes if desired.
  4. In a large bowl, combine chickpeas, tomatoes, cucumber, onion, feta cheese, parsley, and mint.
  5. Drizzle olive oil and lemon juice over the mixture; season with salt and pepper.
