Description

Lentil Soup with Cumin and Lemon is a heartwarming dish that combines earthy lentils, aromatic spices, and zesty lemon for a nourishing meal any day of the week.


Ingredients

  • 1 cup green or brown lentils
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 stalks celery, chopped
  • 3 garlic cloves, minced
  • 1 tsp cumin powder
  • Juice of 1 lemon
  • 4 cups vegetable broth or water
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions, carrots, and celery; sauté for about 5 minutes until softened.
  2. Stir in minced garlic and cumin powder; cook for another 30 seconds until fragrant.
  3. Add lentils and pour in vegetable broth or water; stir to combine.
  4. Bring to a boil, then reduce heat to low. Cover slightly ajar and simmer for 25–30 minutes until lentils are tender.
  5. Stir in lemon juice and season with salt and pepper; adjust to taste.
  6. Serve warm in bowls, garnished with fresh herbs if desired.
