- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat. Add onions, carrots, and celery; sauté for about 5 minutes until softened.
- Stir in minced garlic and cumin powder; cook for another 30 seconds until fragrant.
- Add lentils and pour in vegetable broth or water; stir to combine.
- Bring to a boil, then reduce heat to low. Cover slightly ajar and simmer for 25–30 minutes until lentils are tender.
- Stir in lemon juice and season with salt and pepper; adjust to taste.
- Serve warm in bowls, garnished with fresh herbs if desired.
