  • 1 can (15 oz) black beans, rinsed
  • 1 cup cooked quinoa
  • 1 cup bell peppers, diced
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 2 tsp cumin
  • 1 tsp smoked paprika
  • 1 cup breadcrumbs (whole grain recommended)
  • 4 whole wheat or gluten-free buns

Instructions

  1. Rinse the black beans until water runs clear. Cook quinoa according to package instructions (about 15 minutes).
  2. In a skillet over medium heat, sauté onions in olive oil until translucent. Add garlic and bell peppers; cook until softened.
  3. In a large bowl, mash black beans until slightly chunky. Stir in cooked quinoa, sautéed veggies, breadcrumbs, cumin, and smoked paprika until combined.
  4. Form the mixture into patties (about half an inch thick) and place on a parchment-lined baking sheet.
  5. Preheat the grill or skillet over medium-high heat. Cook each patty for 5-7 minutes on each side until golden brown.
  6. Toast buns lightly while cooking patties. Assemble burgers with desired toppings.
