Description

Carrot Halwa is a luscious Indian dessert made from fresh carrots, milk, and aromatic spices. This sweet treat is perfect for celebrations or cozy nights in.


Ingredients

  • 4 cups grated fresh carrots
  • 2 cups whole milk (or almond/coconut milk for vegan)
  • ¾ cup sugar (adjust to taste)
  • 3 tablespoons ghee (or butter)
  • ½ teaspoon cardamom powder
  • Toasted cashews and almonds
  • Raisins

Instructions

  1. Grate fresh carrots until you have about 4 cups.
  2. In a large pan, melt ghee over medium heat and sauté grated carrots for about 10 minutes until softened.
  3. Add milk and let it simmer gently for 20-25 minutes until most of the liquid evaporates.
  4. Stir in sugar and cardamom powder; cook on low heat for another 10 minutes until well combined.
  5. Mix in toasted nuts and raisins, then transfer to a serving dish. Garnish with additional nuts if desired.
