- 4 cups grated fresh carrots
- 2 cups whole milk (or almond/coconut milk for vegan)
- ¾ cup sugar (adjust to taste)
- 3 tablespoons ghee (or butter)
- ½ teaspoon cardamom powder
- Toasted cashews and almonds
- Raisins
Instructions
- Grate fresh carrots until you have about 4 cups.
- In a large pan, melt ghee over medium heat and sauté grated carrots for about 10 minutes until softened.
- Add milk and let it simmer gently for 20-25 minutes until most of the liquid evaporates.
- Stir in sugar and cardamom powder; cook on low heat for another 10 minutes until well combined.
- Mix in toasted nuts and raisins, then transfer to a serving dish. Garnish with additional nuts if desired.
