- 4 firm bell peppers (red, yellow, or green)
- 1 lb lean ground beef
- 1 cup cooked rice
- 1 medium diced onion
- 1 can (15 oz) diced tomatoes
- 1 cup shredded cheese (cheddar or mozzarella)
- 2 tbsp olive oil
- salt, pepper, cumin, parsley
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove seeds.
- In a skillet, heat olive oil over medium heat and sauté diced onions until translucent (about 5 minutes).
- Add the ground beef and spices; cook until browned (8-10 minutes).
- Stir in cooked rice and canned tomatoes; simmer for 5 minutes.
- Stuff each bell pepper generously with the beef mixture.
- Place stuffed peppers in a baking dish with water to keep them moist, cover with foil, and bake for 25 minutes.
- Uncover, sprinkle cheese on top, and bake for an additional 10 minutes until cheese is melted.
