Ingredients

  • 2 lbs chuck roast
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 cup low-sodium beef broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • Corn tortillas
  • Fresh cilantro and lime for topping

Instructions

  1. 1. Season the chuck roast with salt and pepper. Heat oil in a skillet over medium-high heat and sear the roast on all sides until browned.
  2. 2. Remove the roast and sauté chopped onion and minced garlic in the same skillet until translucent.
  3. 3. Return the roast to a slow cooker with sautéed onions, garlic, beef broth, cumin, and chili powder. Cook on low for 8 hours or high for 4 hours.
  4. 4. Once cooked, shred the beef using two forks and drizzle some cooking liquid over it.
  5. 5. Warm corn tortillas in a skillet, then fill with shredded beef and your choice of toppings like cilantro and lime juice.
