- 2 lbs chuck roast
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 cup low-sodium beef broth
- 1 tsp cumin
- 1 tsp chili powder
- Corn tortillas
- Fresh cilantro and lime for topping
Instructions
- 1. Season the chuck roast with salt and pepper. Heat oil in a skillet over medium-high heat and sear the roast on all sides until browned.
- 2. Remove the roast and sauté chopped onion and minced garlic in the same skillet until translucent.
- 3. Return the roast to a slow cooker with sautéed onions, garlic, beef broth, cumin, and chili powder. Cook on low for 8 hours or high for 4 hours.
- 4. Once cooked, shred the beef using two forks and drizzle some cooking liquid over it.
- 5. Warm corn tortillas in a skillet, then fill with shredded beef and your choice of toppings like cilantro and lime juice.
