- 1 jar preserved grape leaves
- 1 cup short-grain rice
- 1 medium onion, finely chopped
- 1/2 cup fresh parsley, chopped
- 1/4 cup fresh dill, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup olive oil
- Juice of 1 lemon
- Salt and pepper to taste
- Vegetable broth for cooking
Instructions
- Rinse grape leaves in cold water; lay them flat.
- In a bowl, mix rice, onion, herbs, olive oil, lemon juice, salt, and pepper until combined.
- Place a tablespoon of filling in each grape leaf's center; fold sides and roll tightly.
- Layer leftover grape leaves in a pot; place stuffed rolls seam-side down.
- Pour vegetable broth over the rolls; drizzle with olive oil and cover with an inverted plate.
- Simmer on medium heat for about 45 minutes until tender. Cool slightly before serving.
