Ingredients

  • 2 cups rolled oats
  • 1/2 cup honey
  • 1 cup mixed dried fruits (such as cranberries and apricots)
  • 1/2 cup chopped walnuts
  • 1/4 cup pumpkin seeds
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. In a large bowl, mix rolled oats, nuts, dried fruits, salt, and any seeds until evenly combined.
  3. In another bowl, whisk together honey and vanilla extract. Pour over the dry mixture and stir until well coated.
  4. Transfer the mixture to the prepared baking dish, pressing down firmly with your hands or a spatula to compact it.
  5. Bake for 20-25 minutes or until golden brown on top. Allow cooling completely before lifting out and slicing into bars.
