- 1/4 cup fresh parsley
- 1 medium onion
- 2 garlic cloves
- 1 tsp cumin powder
- 1/4 cup all-purpose flour
- Pita bread or tortillas
- 1/4 cup tahini paste
- Juice of 1 lemon
- Water
- Garlic powder
- Salt
- Pepper
Instructions
- Rinse canned chickpeas and finely chop onion, parsley, and garlic.
- In a food processor, blend chickpeas, parsley, onion, garlic, cumin powder, flour, salt, and pepper until slightly chunky.
- Shape the mixture into small balls (1-2 inches in diameter).
- Fry in hot oil (350°F) until golden brown (about 3-4 minutes per side) or bake at 375°F for 25 minutes.
- For the sauce: Mix tahini with lemon juice and water until smooth; season with garlic powder, salt, and pepper.
- Warm pita or tortillas; fill with falafels and veggies. Drizzle with tahini sauce before rolling.
