Ingredients

  • 1 can (15 oz) chickpeas
  • 1/4 cup fresh parsley
  • 1 medium onion
  • 2 garlic cloves
  • 1 tsp cumin powder
  • 1/4 cup all-purpose flour
  • Pita bread or tortillas
  • 1/4 cup tahini paste
  • Juice of 1 lemon
  • Water
  • Garlic powder
  • Salt
  • Pepper

Instructions

  1. Rinse canned chickpeas and finely chop onion, parsley, and garlic.
  2. In a food processor, blend chickpeas, parsley, onion, garlic, cumin powder, flour, salt, and pepper until slightly chunky.
  3. Shape the mixture into small balls (1-2 inches in diameter).
  4. Fry in hot oil (350°F) until golden brown (about 3-4 minutes per side) or bake at 375°F for 25 minutes.
  5. For the sauce: Mix tahini with lemon juice and water until smooth; season with garlic powder, salt, and pepper.
  6. Warm pita or tortillas; fill with falafels and veggies. Drizzle with tahini sauce before rolling.
