- 3–4 boneless, skinless chicken breasts
- 1 cup plain Greek yogurt
- 1 cup chopped celery
- ½ cup finely chopped red onion
- ¼ cup fresh dill and parsley (chopped)
- Juice of 1 lemon
- Salt and pepper to taste
- Optional: ½ cup toasted almonds or walnuts
Instructions
- Boil chicken breasts in salted water for 15-20 minutes until cooked through (internal temperature of 165°F).
- While the chicken cooks, chop celery and red onion.
- In a large bowl, mix Greek yogurt, lemon juice, salt, pepper, and herbs until smooth.
- Once the chicken is cooked and slightly cooled, shred it using forks or hands.
- Combine shredded chicken with the yogurt mixture and chopped veggies; mix gently.
- If desired, fold in nuts for extra crunch. Serve chilled or at room temperature.
