Deliciously creamy and refreshing, this chicken salad with Greek yogurt is a healthy meal option packed with flavor and perfect for any occasion.


Ingredients

  • 34 boneless, skinless chicken breasts
  • 1 cup plain Greek yogurt
  • 1 cup chopped celery
  • ½ cup finely chopped red onion
  • ¼ cup fresh dill and parsley (chopped)
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Optional: ½ cup toasted almonds or walnuts

Instructions

  1. Boil chicken breasts in salted water for 15-20 minutes until cooked through (internal temperature of 165°F).
  2. While the chicken cooks, chop celery and red onion.
  3. In a large bowl, mix Greek yogurt, lemon juice, salt, pepper, and herbs until smooth.
  4. Once the chicken is cooked and slightly cooled, shred it using forks or hands.
  5. Combine shredded chicken with the yogurt mixture and chopped veggies; mix gently.
  6. If desired, fold in nuts for extra crunch. Serve chilled or at room temperature.
