- 3–4 boneless skinless chicken breasts
- 2 cloves fresh garlic
- Corn or flour tortillas
- Salsa verde
- 2 cups shredded cheese (cheddar and Monterey Jack)
- 1 can black beans
- Fresh cilantro
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a baking dish.
- Cook seasoned chicken in a skillet over medium heat for 6-7 minutes per side until fully cooked; shred once cooled.
- Sauté chopped garlic in the same skillet until fragrant, then add drained black beans.
- In a bowl, combine shredded chicken with salsa verde and half the cheese.
- Layer tortillas in the baking dish, followed by half of the chicken mixture, then another layer of tortillas.
- Repeat layering with remaining chicken mixture and tortillas. Pour any leftover sauce on top.
- Top with remaining cheese and bake for 25-30 minutes until bubbly and golden brown.
