Ingredients

  • 34 boneless skinless chicken breasts
  • 2 cloves fresh garlic
  • Corn or flour tortillas
  • Salsa verde
  • 2 cups shredded cheese (cheddar and Monterey Jack)
  • 1 can black beans
  • Fresh cilantro

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a baking dish.
  2. Cook seasoned chicken in a skillet over medium heat for 6-7 minutes per side until fully cooked; shred once cooled.
  3. Sauté chopped garlic in the same skillet until fragrant, then add drained black beans.
  4. In a bowl, combine shredded chicken with salsa verde and half the cheese.
  5. Layer tortillas in the baking dish, followed by half of the chicken mixture, then another layer of tortillas.
  6. Repeat layering with remaining chicken mixture and tortillas. Pour any leftover sauce on top.
  7. Top with remaining cheese and bake for 25-30 minutes until bubbly and golden brown.
