Ingredients

  • Boneless chicken thighs
  • Fresh garlic
  • Fresh ginger
  • Yellow onion
  • Canned crushed tomatoes
  • Coconut milk
  • Curry powder
  • Vegetable oil
  • Fresh cilantro (for garnish)

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Add diced yellow onion and sauté until translucent, about 5-7 minutes.
  2. Stir in minced garlic and grated ginger, cooking until fragrant, about 1-2 minutes.
  3. Add boneless chicken thighs to the pot and brown on all sides for about 8-10 minutes.
  4. Sprinkle curry powder over the chicken, then add crushed tomatoes; mix well.
  5. Pour in coconut milk, stir, lower the heat, cover partially, and simmer for 20-25 minutes until thickened.
