- 2 cups fresh carrots, diced
- 2 cups green beans, trimmed

- 1 cup low-sodium chicken broth
- 2 cups biscuit mix
- ¾ cup milk
- Salt and pepper to taste
- 1 tsp dried thyme
Instructions
- Preheat oven to 375°F (190°C) and spray a 9×13-inch baking dish with nonstick cooking spray. Season chicken breasts with salt and pepper and place them in the dish.
- In a skillet, heat olive oil or butter over medium heat. Sauté onions and garlic until fragrant (about 3 minutes). Add carrots and green beans; cook until tender-crisp (approximately 5 minutes).
- Pour in chicken broth and sprinkle thyme; simmer for about 5 minutes until slightly thickened.
